Classic French Strawberry tart

A strawberry tart is the perfect summer dessert. It starts with a buttery crust, a creamy filling, and then a topping of fresh berries finished off with a fruit glaze.

Preparation 30 min + cooking time


Pastry Ingredients

  • 250g plain flour + a little extra for dusting
  • 125g cold butter, cubed
  • 2 Tbsp icing sugar
  • 1 egg yolk
  • 1 Tbsp cold water from the fridge
  • 1 Tbsp cold water from the fridge

Alternative option: buy an already-made puff pastry (can be found in the frozen section of your supermarket.. shhh it's our little secret)


  1. Turn on oven to 160 degrees.
  2. For the pastry mix everything EXCEPT for the water. Once combined add the water.
  3. Place the dough onto a floured surface, press into a disc and wrap in clingfilm.
  4. Place in the fridge to rest for 20 minutes.
  5. Remove the pastry from the fridge and roll out onto a floured surface
  6. Place into your tart dish, use a fork to pick the base of the tart. Make 12-14 picks.
  7. Cook for 20-30 Minutes until golden.

Strawberry tart filling

  • 500ml thickened cream
  • 400ml milk
  • 2tspn vanilla paste
  • 1 punnet of fresh strawberry
  • 230g sugar
  • 70g corn starch
  • 8 egg yolks
  • 60g butter


  1. Put all ingredients into a pot (except the butter).
  2. Bring to a boil whisking constantly.
  3. Wait until nice and thick about 5-10min.
  4. Remove from heat and add butter.
  5. Blend everything with either a stick blender or blender.
  6. Pass through a sieve into a bowl.
  7. Cool in fridge.
  8. Thinly slice the strawberries and put aside.
  9. Place tart base on a cake stand or a plate.
  10. Remove custard from the fridge and smear across the tart shell, create a nice and even layer.
  11. Lay your stawberry on top of the tart.
  12. Option: zest lime on top.
