Recipe: La tarte aux fraises
A strawberry tart is the perfect summer dessert. It starts with a buttery crust,
a creamy filling, and then a topping of fresh berries finished off with a fruit glaze.

Serves : 6 people

Pastry Ingredients
- 250g plain flour + a little extra for dusting
- 125g cold butter, cubed
- 2 Tbsp icing sugar
- 1 egg yolk
- 1 Tbsp cold water from the fridge

Instructions
- Turn on oven to 160 degrees.
- For the pastry mix everything except for the water. Once combined add the water.
- Place the dough onto a floured surface, press into a disc and wrap in clingfilm.
- Place in the fridge to rest for 20 minutes.
- Remove the pastry from the fridge and roll out onto a floured surface
- Place into your tart dish, use a fork to pick the base of the tart. Make 12-14 picks.
- Cook for 20-30 minutes until golden.
Strawberry tart filling ingredients
- 500ml thickened cream
- 400ml milk
- 2 tspn vanilla paste
- 1 punnet of fresh strawberry
- 230g sugar
- 70g corn starch
- 8 egg yolks
- 60g butter
Instructions
- Put all ingredients into a pot (except the butter).
- Bring to a boil whisking constantly.
- Wait until nice and thick about 5-10min.
- Remove from heat and add butter.
- Blend everything with a blender.
- Pass through a sieve into a bowl.
- Cool in fridge.
- Thinly slice the strawberries and put aside.
- Place tart base on a cake stand.

Remove custard from the fridge and smear across the tart shell, create a nice and even layer.
- Lay your strawberry on top of the tart.
- Option: zest lime on top.
