Recipe: Le Croque Monsieur
Distinct from a classic Australian toastie, a Croque Monsieur is a traditional French sandwich made with ham,
Gruyere cheese and béchamel sauce layered between slices of bread. The sandwich is then toasted or grilled until the bread is crispy and
golden brown. It is a popular dish in cafés and bistros across France and is often served as a quick and satisfying meal.

Ingredients:
- 8 slices of sandwich bread (white or sourdough)
- 8 slices of ham
- 8 slices of Gruyere cheese
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1/4 teaspoon salt
- 1/8 teaspoon each of black pepper and nutmeg
Instructions:
- Preheat the oven to 200°C.

In a small saucepan, melt the butter over medium heat. Add the flour and whisk to combine. Cook for 1-2
minutes, stirring constantly, until the mixture turns a light golden color.

Gradually whisk in the milk, salt, pepper, and nutmeg. Whisking constantly, cook until the mixture
thickens and comes to a boil. Reduce the heat and simmer for 2-3 minutes.
- Remove from the heat. Set the béchamel sauce aside.

Lay out 4 slices of bread on a baking sheet. Top each slice with a slice of ham and a slice of Gruyere cheese.

Spoon a layer of the béchamel sauce on top of the cheese, then top with another slice of bread.

Spread a thin layer of the remaining béchamel sauce on top of each sandwich, then sprinkle with additional
Gruyere cheese.

Bake in the oven for 8-10 minutes, or until the cheese is melted and golden brown.
Top tip: add a fried egg on top to make a Croque Madame!
